Method of making Vegetable Biryani Recipe
- Take one cup of good quality Basmati rice.
- Desi ghee 1/4 cup
- Oil 1/4 cup.
- Curd 1/4 cup.
- Take just 1/2 teaspoon.
- Turmeric powder 1/4 teaspoon and grate 1 inch piece of ginger.
- Take two green chillies cut lengthwise.
- Coriander powder in one teaspoon.
- Red chilli powder in 1/4 teaspoon.
- Salt according to your taste.
- Take 25 threads of saffron.
- Take two table spoons of cashew nuts.
- Take one table spoon of raisins.
- Take whole garam masala.
- Take 1.5 inch cinnamon.
- Take 8 black peppercorns.
- Take two big cardamoms.
- Take two pinches of nutmeg broken.
- Take one bay leaf and 5 or 6 cloves and 3 small cardamoms.
- Among green vegetables, take one cup of chopped cauliflower.
- Keep two table spoons of finely chopped coriander leaves.
- Chop carrots into thin 1.5 inch pieces.
- Take 10 fresh beans and cut them into 1 inch pieces.
- Take two potatoes, two tomatoes and 10 mint leaves.

Method of making Vegetable Biryani Recipe
Prepare rice by boiling it, in the meanwhile prepare vegetables by frying them, heat oil in a pan and chop potatoes into long pieces and put them on high flame and fry till they turn light brown and take them out. Add cabbage and carrots and fry on high flame for one or two minutes and take them out. Put capsicum in oil as well and take them out after 1 minute and keep them aside. In this way we have fried all the vegetables and keep them aside.
When rice is cooked and ready, strain it and let the water drain out properly from the rice in the vessel below. Take the rice out of the vessel containing water and keep it in another vessel and let it cool down properly. Remove bay leaves and cardamom peels from the rice and let the rice cool down.
After frying the vegetables, prepare the masala by roasting it in the oil left in the pan. Add cumin seeds in hot oil and fry it. Add ginger paste and green chillies and fry it a little. Fry turmeric powder and coriander powder and masala a little. Cut tomatoes into small pieces and add them to the masala and fry it. Add salt and coarse garam masala, cloves and black pepper and cinnamon stick and peeled and coarsely ground cardamom and mix it. Roast the masala. After this add curd and fry it a little. After this the masala will be ready. Then add the fried vegetables and mix it. Biryani will be prepared in this way.
Take a big and heavy vessel and put a spoonful of ghee in it. Add half the rice and spread it on the vessel. Put the prepared vegetable on top of the rice and spread it evenly and cover it. Put the remaining rice on top of the vegetables and spread it evenly. Sprinkle cashew nuts and raisins over the rice and add green coriander leaves and mint leaves and pour the saffron solution over the biryani and cook on low flame for 15 minutes.
Open the vessel and mix all the things and stop the flame on the hot biryani. In this way your Vegetable Biryani Recipe will be ready.
